I used them by microwaving them for 15 seconds after removing the stems and seeds, to release the oils in the peppers. Then I cooked them in chicken stock and coffee and pureed them. I strained the paste to remove any unblended skins and used the sauce as a base for chili con carne. The three different pepper flavors really rounded out and complimented each other for a robust and complex chili. 6 ancho, 3 gaujillo, and 3 chile d’arbol peppers gave me a good heat and balance.
